If you’re having trouble getting your cheeses hard, this is the class for you! We’ll explore how to create hard, sliceable cheeses that age and improve over time (like us!). Learn different methods for preserving and adding extra depth to your cheeses from brining to wrapping your cheese in different types of leaves. Techniques and cheeses that are not in Artisan Vegan Cheese will be explored, as well as some of the more difficult cheeses from the book (such as Gouda). To Register, use Paypal below.
Summer Cooking and Dessert Intensive: June 17 – 21, 2013, 11:00 – 5:00 each day $800.00 for the week (includes all materials and recipes). San Anselmo, CA Address will be sent upon registration. Spend a week in Miyoko’s kitchen learning what it means to create artisan vegan dishes. In this intimate hands-on class, we’ll cover everything from star dishes that will wow omnivores to mastering vegan baking techniques. Not everyday vegan food, but spectacular vegan food, from appetizers to soups, and entrees to desserts. And yes, we’ll make a few cheeses as well, and then incorporate them into stellar dishes.
